Ingredients

S'mores chocolate mousse

  • 120g marshmallows
  • 150g dark chocolate (50%-60% cocoa)
  • 300g double/heavy cream

Topping

  • 2-4tbsp Graham cracker or Digestive biscuit crumbs
  • 100g milk or dark chocolate
  • 2-4 Marshmallows

Other items needed

  • Cocktail sticks
  • Kitchen torch
  • 200ml x 2 ramekins or 4 x 100ml ramekins

Instructions

S'mores chocolate mousse

  1. Chop the chocolate into small pieces, pour into a microwave safe bowl.
  2. Pour the cream on top of the chocolate and the marshmallows (Please note if you use regular size marshmallows they take longer to melt in the microwave, you might have to remove then and melt them separately, stirring in between)
  3. Once the chocolate and cream have melted stir together with the melted marshmallows. Make sure there aren't any marshmallows lumps, the mixture needs to be smooth and creamy.
  4. Pour the mixture into a mixing bowl, mix using an electric mixer for 1 minute.
  5. Pour into either 2 x 200L ramekins or 4 x 100L ramekins.
  6. Cover them with foil/clingfilm and refrigerate for 4 hours or overnight.
  7. Remove them from the fridge 20-30 minutes before you serve them.
  8. Drizzle melted chocolate on top of each ramekin, a spoonful of Graham cracker or Digestive biscuit crumbs.
  9. Then push a cocktail stick into a marshmallow, toast with a kitchen torch then place on top.

How to serve

  1. Serve with extra toasted marshmallows on sticks to dip into the chocolate mousse, they taste delicious!
