You have probably seen the viral S’mores cookies on Tik Tok were you place cookie dough on top of a Graham cracker, chocolate and a marshmallow. I have swapped out the Graham cracker for an Oreo cookie and sprinkled some on top before baking them in the oven.

So if you love chocolate, marshmallows and Oreos, these cookies are for you. They are easy to make, fun to eat and totally irresistible. Here’s what you need to know about these amazing cookies and why you should make them as soon as possible.

  • Use parchment paper or wax paper to line your baking sheet. This will prevent the cookies from sticking and make cleanup easier.
  • Do not over bake the cookies, 15 mins is perfect.
  • Chill the cookie dough in the fridge for 20-30 mins before baking which will make it easier to handle and spread less when baking.

Ingredients

  • 9-10tbsp /140g salted butter
  • 1/4 cup / 50g granulated sugar 1/2 cup (packed) / 85g light brown sugar
  • 1 egg
  • 1 tbsp vanilla extract
  • 180g /1 1/2 cups plain flour 
  • ½ tsp baking powder
  • 1 tsp corn starch
  • ¼ tsp salt
  • 100g dark chocolate 
  • 10 Oreos cookies

This recipe should make 7 cookies.

Instructions

  1. Cream the room temperature butter and sugars together until creamy.
  2. Add the egg and vanilla extract, mix until combined.
  3. Add the dry ingredients to the wet ingredients, mix together using a spatula.
  4. Chop 60g of dark chocolate into small cubes and mix into the cookie dough.
  5. Chill the cookie dough in the fridge for 20 -30mins.
  6. Assemble the cookies by placing an Oreo cookies on a baking tray, then a a piece of chocolate, then a marshmallow (cut them in half if you do not want the marshmallow to stick completely out of the cookie).
  7. Mould 70g of cookie dough over the marshmallow, bake in the oven @170c for 15 mins.

This recipe should make 7 cookies.
