Easy Chocolate Chip Cookies For Two

If you’re like me, you love chocolate chip cookies. But sometimes, you don’t want to make a whole batch and end up eating too many. Or maybe you just want to surprise your partner with a sweet treat. That’s why I’m going to show you how to make chocolate chip cookies for two!

These cookies have a caramelised brown sugar flavour with the right amount of salt and full of chocolate chips. I also put some chocolate chunks on top which create the most gorgeous pools of melted chocolate on top of the cookies.

So how do you make just two chocolate chip cookies?

Making two chocolate chip cookies is so easy but I’m sure you are wondering how exactly? How many eggs do you use in the recipe for example?

Well don’t worry I am going to explain, you make the measurements with tablespoons. You will use 2 tbsp of butter instead of 1 cup. The entire recipe is measured in tbsp, which makes it very easy to weigh all the ingredients correctly.

Now I’m sure you are wondering about using a whole egg in a recipe that creates only two cookies. Well I promise the cookies do not taste ‘eggy’ at all. We only use the egg yolk in this recipe which makes the cookies fudgy and moist.

Why should you make a cookies for two recipe? Well, there are many reasons to bake a small batch of delicious cookies, but here are some of the best ones:

How do we make these chocolate chip cookies?

  1. Cream together the room temperature butter, granulated sugar and dark brown sugar.
  2. Add the vanilla extract and egg yolk. Mix together until combined using a spatula.
  3. Add the flour, bicarbonate of soda and salt. Mix together using a spatula until just combined.
  4. Stir in the chocolate chips. 
  5. Split the cookie dough into two, put the dough balls in the freezer for 10 mins.
  6. Place the cookie dough balls on a lined baking tray. Place chocolate chunks on top of the cookie dough balls and a few chocolate chips. Bake in the oven at 165c for 13 mins.

Tips for making the perfect chocolate chip cookies for two?

Sugar: Always use a mix of white and brown sugar when you make cookies.

Egg yolk: The egg yolk will make your cookies their soft and fudgy.

Vanilla extract: Is a must, it brings all the amazing flavours together.

Chocolate chips: Personally I think semi-sweet or dark chocolate chips are a must when making cookies. Milk chocolate is sweet and doesn’t create a well balled rich cookie.

Salt: Cookies (and most baked goods) need salt, especially cookies. The salt helps to balance out the sweet flavours in the cookie. Without it you really will notice the difference.

Chocolate chip cookies

  • 2tbsp butter
  • 1tbsp granulated sugar
  • 2tbsp soft dark sugar
  • 1/2tbsp vanilla extract
  • 1 egg yolk
  • 4.5tbsp plain flour
  • 1/8tsp bicarbonate of soda
  • 1/8 tsp salt
  • 2tbsp dark chocolate chips
  • 6 chocolate chunks (topping)

Instructions

  1. Cream together the butter, granulated sugar and dark brown sugar.
  2. Add the vanilla extract and egg yolk. Mix together until combined using a spatula.
  3. Add the flour, bicarbonate of soda, baking powder and salt. Mix together using a spatula until just combined.
  4. Stir in the chocolate chips. 
  5. Split the cookie dough into two, put the dough balls in the fridge in the freezer for 10 mins to stop the cookies spreading too much. 
  6. Place the cookie dough balls on a lined baking tray. Place chocolate chunks on top of the cookie dough balls and a few chocolate chips. Bake in the oven at 165c for 13 mins. 
  7. Serve the cookies warm with a sprinkle of cracked sea salt.
