  2. Add 8 scoops of Nutella, then add the remaining mixture on top.

Step Two

  1. Spread the top flat, then with a knife make a line down the middle.
  2. Bake at 160c fan for 1hr 10 mins.

  1. Spread 4 heaped tbsp of Nutella on top.

Ingredients

FerreroRocher loaf cake

  • 200g butter (room temperature)
  • 340g caster sugar
  • 1tsp vanilla extract
  • 4 medium eggs (room temperature)
  • 180g plain flour
  • 1/2tsp baking powder
  • 1/2tsp salt
  • 60g cocoa powder
  • 200g sour cream (room temperature)
  • 12 heaped tbsp Nutella

Nutty chocolate ganache

  • 150g dark chocolate (50-60% cocoa)
  • 200g double/heavy cream
  • 50g chopped nuts (you can use hazelnuts, peanuts, walnuts)

 

Instructions

Ferrero rocher loaf cake

  1. Cream the butter, sugar and vanilla extract together for 2 minutes until creamy and combined.
  2. Add one egg at a time, mix in between with electric beaters.
  3. Sift half the the dry ingredients into the wet ingredients, mix together until just combined using a spatula.
  4. Add the sour cream, mix until combined using a spatula.
  5. Sift the remaining dry ingredients into the wet ingredients, mix until combined with a spatula.
  6. Add half the cake mixture into a 9x5" lined loaf tin.
  7. Add 8 scoops of Nutella, then add the remaining mixture on top.
  8. Spread the top flat, then with a knife make a line down the middle.
  9. Bake at 160c fan for 1hr.

Nutty chocolate ganache

  1. Chop the chocolate into small pieces or blitz in a food processor.
  2. Heat the cream in a measuring jug for 50 seconds, you want it hot but not bubbling.
  3. Pour over the chocolate, let if sit for a minute, then stir gently to combine.
  4. Heat in the microwave 10 seconds at a time if the chocolate has not melted into the cream.
  5. Chop the nuts into small pieces (not too small).
  6. Add the nuts, stir to combine.
  7. If you would like the chocolate ganache to be sweeter add 1-2tbsp of golden syrup.

Assemble

  1. Once the cake has finished baking remove the cake from the loaf tin after 10 minutes.
  2. Let it cool completely , then spread 4 heaped tbsp of Nutella on top, then pour the cooled nutty chocolate ganache on top. You can warm it in the microwave for 5-10 seconds so it is a pourable consistency. (You can save a bit for serving)
