How do I make these Snickers Brookies?
There are three parts that you need to make to bring this fudgy dessert mash up together-brownie batter, a peanut caramel sauce and cookie batter.
Cookie layer
- Cream the room temperature butter, white and brown sugar together.
- Add the egg and vanilla extract, mix until combined.
- Add the flour, baking powder, bicarbonate of soda and salt. Use a spatula to fold into the wet ingredients.
- Fold in the chocolate chips.
- Cover the bowl with cling film and chill in the fridge until ready to use.
Peanut caramel filling
- Melt the soft caramels on a low heat until melted.
- Add 1/4 cup double cream mix until combined then add the peanuts.
- Remove from the heat, but leave in the sauce pan.
Brownies
- Line a 20x20cm brownie tin with baking paper.
- Melt the dark chocolate and butter in the microwave, 20 secs at a time. Mix together, make sure the melted chocolate and butter are well combined. This stops the brownies batter from splitting. Set aside to cool for 5-10 mins.
- Mix the eggs, sugar & vanilla extract with an electric beater/stand mixer for 3 mins until creamy.
- Fold in the slightly cooled melted chocolate and butter mix with a spatula.
- Sift half the flour, cocoa and salt into the wet ingredients, fold in with a spatula. Repeat with the remaining dry ingredients.
- Fold in the dark chocolate chunks.
